
Ingredients
4 ripe bananas
⅓ cup dates, roughly chopped
1/2 a cup of chopped walnuts
⅓ cup organic rapadura sugar or raw suagr
2 eggs
2.5 cups organic white spelt flour or any plane flour you have
1 cup Greek yoghurt
2 tbsp butter, melted
1 tsp vanilla
1 tsp bicarbonate soda
2 tsp baking powder
Pinch of salt
Method
- Add the banana, eggs, vanilla, and yoghurt to a bowl.
- Blend with a stick blender until smooth, or simply stir for a chunkier banana bread.
- In a separate bowl, combine the flour, bicarbonate of soda, baking powder, salt, and sugar.
- Mix the dry ingredients well.
- Add the melted butter and the banana mixture to the dry ingredients.
- Stir until just combined. Do not overmix.
- Fold in the chopped dates and walnuts.
- Cover the bowl with a clean tea towel.
- Let the batter rest at room temperature for 24 hours.
- Preheat the oven to 170°C (340°F).
- Grease a baking dish and pour in the batter.
- Bake for 45 minutes, or until a skewer or fork inserted into the center comes out clean.
Serving ideas:
